How are our raw products prepared?
Our products are hand cut and processed locally in Ontario. The facility is used for commercial seafood handling, all our equipment is thoroughly cleaned and inspected after each use. The facility and leadership has over +40 years experience of commercial handling of seafood and preparing of sushi-grade products.
What is a saku block?
Saku blocks are prepared sushi/sashimi-ready blocks, awaiting the final cut (thickness of the slice is up to you!). The blocks are carefully prepared: deboned, scales removed, skinned, trimmed to remove any imperfections, and sized + handled for safe and easy raw eating!
What makes our products different?
We deliver Omakase-Grade: We've sourced the highest grade products through thorough research and testing. This is possible due to our trusted network of fishermen and suppliers that supply Michelin grade restaurants and sushi spots throughout Canada. We test all our products personally before putting our stamp on it and deem it fit for Project Umami.
Delivery process
We deliver door to door - to your home, office, store, kitchen, or venue (anywhere with an address)!
Our drivers are specifically trained for raw food handling and our packaging is engineered to handle raw seafood products safely. Please be present at the given delivery window to receive and store right away! We are not responsible if you are not there to receive our products and the package is lost or damaged. Our drivers are instructed to leave orders at door if no one is there to receive it.

Ordering process
You will be asked to choose your delivery date/time at check out. We have tightly controlled delivery windows as we are handling raw seafood products!
- your order must exceed $75 CAD (before tax) for us to fulfill your order and ship.
- orders over $200 CAD (before tax) will receive free shipping.
COMING SOON: We are working towards a pop-up / pick-up location for smaller orders in the future!
Rule of thumb for raw eating
For raw fish products:
- In the box: can remain up to 12hrs. during transport and delivery. Freeze immediately after receiving unless serving right-away.
- If left frozen after delivery: best to eat within 2 weeks, all Tuna products best within 10 days.
- After the first thaw: best to eat within 2 days refrigerated. For Tuna products, it is recommended you eat the day it is thawed.
- If refrozen after thawing: best to eat within 1 week (it will slowly lose texture/flavour after the first thaw). For Tuna products, refreezing is not recommended as it will discolour and lose flavour (only thaw what you need).
For Uni, Ebi, and Ikura:
- In the box: can remain up to 12hrs. during transport and delivery. Freeze immediately after receiving unless serving right-away.
- If left frozen after delivery: best to eat within 2 weeks.
- After the first thaw: best to eat within 2 days refrigerated. For Uni, it is recommended to eat the day it is thawed for max. flavour and texture.
- If refrozen after thawing: best to eat within 2 weeks (it will slowly lose texture/flavour after the first thaw). For Uni, refreezing is not recommended as it loses too much flavour and texture.

Customer Policy and Returns
Returns:
We do not accept returns on any of our products.
Due to the fresh nature and handling process of our products, we do not accept returns. To meet our standard of quality and care placed into each and every product - we have strict control over what we bring in and sell.
Delivery Policy:
Our delivery policy is to hand deliver our products to a person for receiving. If there is no one to receive our product, we will leave the products at the door. Although our packages are designed to temperature control, leaving our products out for extended time is not recommended.
Once delivered, any damages or stolen products are not the responsibility of Project Umami. It is the customer's responsibility to properly receive and store our products.

Packed and Designed with Care
Our packaging has been engineered to keep our products at optimal condition.
Heavy duty interlocking box: to make sure your products don't get crushed and is well protected during transport.
Temperature control: 360 heavy duty full insulation sleeve - tested to keep refrigerated temperatures for up to 12 hours. Our kits also come with extra icepacks to keep things nice and cool.
Please store or prepare the products promptly after receiving. Just because our boxes are well made, it does not mean you can leave it out and forget it!
We Take Raw Seriously
Our goal has always been to offer peace of mind, safe, and easy way of accessing raw sushi-grade eating.
Vacuum Sealed: raw products are professionally vacuum sealed immediately after being prepared to maximize freshness.
SUPER / FLASH Frozen: our raw products are all SUPER / FLASH frozen immediately after being cut. The flash freezing process rapidly freezes our products at -60 C (medical grade flash freezer), tightly controlling food safety, retaining moisture + texture, and eliminating freezer burn.
Never Frozen Myth: If you see any retailer or grocer selling you "never frozen" fish - check the label or handling carefully. Unless they are straight from the ocean to your table, it has been frozen for processing/transport. Most "fresh" seafood products have been sitting there thawing in the shelf before you buy, this takes away from the freshness and loses flavour and integrity.
